STAND · MINNESOTA STATE FAIR

West Indies Soul Food

West Indies Soul Food pairs bold Caribbean flavor with Southern soul, seasoning its dishes with a signature blend of island herbs and spices and cooking them fresh daily. Its founder grew up in Port of Spain, Trinidad, moved to Minnesota in 1982 and was nicknamed "Master Chef" for creating and perfecting recipes; over the past 30 years the business has grown a line of all-natural, gluten-free, cholesterol-free sauces now carried in select area grocery stores. Its fair booth is in the International Bazaar at the Minnesota State Fair, and its "Big Emanual" food truck also works festivals around the metro.

The 2026 Minnesota State Fair ended on Monday, September 7, 2026. Everything below describes the 2026 fair, which is the most recent one I hold — stands, buildings and rides carry over year to year, but dates, prices and schedules do not. I update it when the fair publishes for 2027. The 2027 fair runs August 26 – September 6, 2027 — 293 days away.
