The Herbivorous Butcher

The Herbivorous Butcher is the first vegan butcher shop in the United States, founded in northeast Minneapolis by sister-and-brother team Aubry and Kale Walch, making small-batch plant-based meats and cheeses. It returns to the Minnesota State Fair's Food Building each year with a short, fair-only menu — the stall is small, so it typically offers just a couple of items, often deep-fried takes on classics. Its 2026 offerings include a vegan BLT, Freaky Fryday and The Fried and the Furious: Cubano Drift.
