CinnieSmiths is a family concession business started in 1982 by Denny and Barb Smith of Ironton, Minnesota, who set out to make something nobody in the traveling market had: a miniature cinnamon roll. They spent three years perfecting an all-natural, made-from-scratch recipe and first sold it in 1996; with their eight children they later built a custom 28-foot trailer that can bake up to 100 batches a day. 2005 was their first year at the Minnesota State Fair, and they now appear at multiple state fairs, festivals and events.
